Icy cold ice-cream is “drowned” (affogato) in hot, strong black coffee. The coffee must be very hot, the ice-cream very cold and the whole thing done at the table.

8 scoops vanilla bean ice-cream
300ml hot espresso
4 shots of liqueur (frangelico, nocello, cognac etc)

Method

Drop scoops of ice-cream into four chilled parfait or cocktail glasses.

Place the four glasses on four dinner plates, along with a shot glass of your favourite liqueur and — at the last minute — a small cup of very hot espresso. At the table, each person pours first the coffee, then the liqueur over the ice-cream, and digs in as it melts into a creamy, irresistible, mess.
