Serves 4-6

Get white asparagus if you can – the flavour is amazing and it goes so well with the ham. Take the asparagus, ham and dressing in separate containers and assemble the dish at the picnic site.

12 white asparagus spears, trimmed
12 green asparagus spears, trimmed
4 tbsp classic vinaigrette
1 tbsp freshly chopped coriander
12 slices San Daniele ham
Freshly ground salt and pepper

1 Boil a large pan of water. Add the asparagus and cook for 1 minute. Drain and then plunge into a large bowl of iced water.

2 To assemble the salad, arrange the ham in scrunched-up rosettes with the asparagus spears arranged alternately green and white. Spoon over the dressing and season well.
