Simplest soda bread

Ingredients

Serves 6

Prep: 5min plus 30min to bake

450g flour (whatever type you choose)

200ml yoghurt mixed with 150ml milk (or 350ml sour milk or buttermilk)

1 tsp bicarbonate of soda

1 tsp salt

Method

Pre-heat oven to 220C. In a large bowl or tray, stir together the dry ingredients. Mix the milk and yoghurt and pour into the bowl. Gently mix together into a damp dough - there is no need to knead. Shape into a round patty 5cm high, transfer to a lightly floured baking sheet, score a deep cross through the centre, bake for 10min, reduce heat to 200C and bake for 20min.
